Baked Omelet Squares

Ingredients

  • 1/4 cup butter
  • 1 small onion, chopped
  • 1 1/2 cups shredded Cheddar cheese
  • 1 (12 ounce) can sliced mushrooms
  • 1 (6 ounce) can sliced black olives
  • chopped cooked ham (optional)
  • sliced jalapeno peppers (optional)
  • 12 eggs, scrambled
  • 1/2 cup milk
  • 1/2 teaspoon salt and pepper, to taste

 

Prep : 15 m   Cook : 30 m   Ready In : 45 m

Directions

  1. Preheat oven to 400 degrees F (205 degrees C). Grease a 9×13 inch baking dish.
  2. Melt the butter in a skillet over medium heat, and cook the onion until tender.
  3. Spread Cheddar cheese in the bottom of the prepared baking dish. Layer with mushrooms, olives, sauteed onion, ham, and jalapeno peppers. In a bowl, scramble eggs together with milk, and season with salt and pepper. Pour egg mixture over ingredients, but do not stir.
  4. Bake, uncovered, in the preheated oven for 30 minutes, or until no longer runny in the center and slightly brown on top. Allow to cool slightly, then cut into squares and serve.

Spinach Mushroom Omelet

Ingredients

  • 1 egg
  • 3 egg whites
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon shredded reduced-fat Cheddar cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon red pepper flakes
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon olive oil
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup diced green onion
  • 2 tablespoons finely chopped red bell pepper
  • 1 cup torn fresh spinach
  • 1/2 cup diced fresh tomato

Directions

  1. Beat egg and egg whites in a small bowl. Mix in Parmesan cheese, Cheddar cheese, salt, red pepper flakes, garlic powder, nutmeg, and pepper.
  2. Heat oil in a large skillet over medium heat; cook and stir mushrooms, green onion, and bell pepper until tender, about 5 minutes. Place spinach in skillet and cook until just wilted. Stir in diced tomato and egg mixture; as eggs set, lift edges, letting uncooked portion flow underneath. Cook until egg mixture sets, 10 to 15 minutes; cut into wedges and serve immediately.

Simple Italian Omelet

Ingredients

  • 2 tablespoons olive oil
  • 3 eggs, beaten
  • 1 tablespoon crumbled goat cheese, or to taste
  • 2 teaspoons chopped chives, divided, or to taste
  • sea salt and ground black pepper to taste

Directions

  1. Heat olive oil in a large skillet over medium heat, swirling oil to coat the skillet. Pour eggs into hot skillet; eggs will bubble and firm immediately.
  2. Lift cooked edges of the omelet with a rubber spatula and tilt the skillet so that the uncooked egg runs underneath the lifted edge. Continue cooking, lifting edges and tilting the skillet, until omelet is almost completely set, 1 to 2 minutes total cooking time; remove from heat. Spread out any runny egg evenly on the top of the omelet with a rubber spatula.
  3. Sprinkle goat cheese, 1 1/2 teaspoons chives, sea salt, and black pepper over omelet. Gently lift one edge and fold 1/3 of the omelet into the center over the cheese and chives. Fold the opposite 1/3 of the omelet into the center. Slide omelet to the edge of the skillet and flip, folded side down, onto a plate. Top with remaining chives.

French Toast Casserole

  • 5 cups bread cubes
  • 4 eggs
  • 1 1/2 cups milk
  • 1/4 cup white sugar, divided
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon margarine, softened
  • 1 teaspoon ground cinnamon

 

Prep : 30 m   Cook : 50 m   Ready In : 1 h 20 m

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly butter an 8×8 inch baking pan.
  2. Line bottom of pan with bread cubes. In a large bowl, beat together eggs, milk, 2 tablespoons sugar, salt and vanilla. pour egg mixture over bread. Dot with margarine; let stand for 10 minutes.
  3. Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over the top. Bake in preheated oven about 45 to 50 minutes, until top is golden.

Liege Belgian Waffles with Pearl Sugar

  • 1 (.25 ounce) package active dry yeast
  • 1 1/2 tablespoons white sugar
  • 3/4 cup lukewarm milk
  • 3 eggs
  • 1 cup melted butter
  • 2 teaspoons vanilla extract
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 cups pearl sugar (such as Lars’ Own(R))

Directions

  1. Sprinkle the yeast and white sugar over warm milk in a small bowl. The milk should be no more than 100 degrees F (40 degrees C). Let stand for 15 minutes until the yeast softens and begins to form a creamy foam.
  2. Whisk the eggs, melted butter, and vanilla extract into the yeast mixture until evenly blended; set aside. Stir together the flour and salt in a separate large bowl, and make a well in the center. Pour the egg mixture into the well, then stir in the flour mixture until a soft dough forms. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 30 minutes. Gently mix in the pearl sugar.
  3. Preheat a waffle iron according to manufacturer’s instructions.
  4. Place a baseball-size ball of dough on the preheated waffle iron. Cook waffles until golden and crisp, about 2 minutes. Repeat with remaining dough. Allow waffles to cool for 2 to 3 minutes before serving.

Bananas Foster II

  • 3 1/2 tablespoons rum

  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt

Butter Tarts

  • 1 1/2 cups packed brown sugar
  • 2 eggs
  • 1/2 cup butter
  • 2 cups raisins
  • 2 tablespoons heavy cream
  • 1 cup chopped walnuts
  • 30 (2 inch) unbaked tart shells

Directions

  1. Preheat oven to 325 degrees F (170 degrees C).
  2. Cream the butter, sugar and eggs well. Add remaining ingredients and mix thoroughly.
  3. Pour batter into tart shells, no more than half full. Bake for 20 – 25 minutes. Watch carefully!!–they’ll burn quickly. Filling will keep in the refrigerator for 2 weeks or so. Liquid coffee creamer can be used for cream. Use any good pie pastry for shells.

  • 1/4 cup shortening
  • 1/4 cup margarine
  • 2 eggs

  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons ground cardamom
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 2 teaspoons anise extract
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 cup confectioners’ sugar for dusting

 

Prep : 15 m   Cook : 15 m   Ready In : 3 h

Directions

  1. Stir together the molasses, honey, shortening, and margarine in a saucepan over medium heat; cook and stir until creamy. Remove from heat and allow to cool to room temperature. Stir in the eggs.
  2. Combine the flour, white sugar, brown sugar, cardamom, nutmeg, cloves, ginger, anise, cinnamon, baking soda, pepper, and salt in a large bowl. Add the molasses mixture and stir until thoroughly combines. Refrigerate at least 2 hours.
  3. Preheat oven to 325 degrees F (165 degrees C). Roll the dough into acorn-sized balls. Arrange on baking sheets, spacing at least 1 inch apart.
  4. Bake in preheated oven 10 to 15 minutes. Move to a rack to cool. Dust cooled cookies with confectioners’ sugar.

Magic Cookie Bars from EAGLE BRAND(r)

  • 1/2 cup butter or margarine, melted
  • 1 1/2 cups graham cracker crumbs
  • 1 (14 ounce) can EAGLE BRAND(R) Sweetened Condensed Milk
  • 2 cups semisweet chocolate morsels
  • 1 1/3 cups flaked coconut
  • 1 cup chopped nuts

Directions

  1. Heat oven to 350 degrees F (325 degrees for glass dish). Coat 13×9-inch baking pan with no-stick cooking spray.
  2. Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.
  3. Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.
