Stuffed Peppers

Ingredients

  • 1 pound ground beef
  • 1/2 cup uncooked long grain white rice
  • 1 cup water
  • 6 green bell peppers
  • 2 (8 ounce) cans tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt and pepper to taste
  • 1 teaspoon Italian seasoning

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place the rice and water in a saucepan, and bring to a boil. Reduce heat, cover, and cook 20 minutes. In a skillet over medium heat, cook the beef until evenly browned.
  3. Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.)
  4. In a bowl, mix the browned beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers.
  5. Bake 1 hour in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender.

  • 3 tablespoons evaporated milk

  1. Preheat grill for high heat.

  • 1/2 pound extra-lean ground beef
  • 1 egg, lightly beaten
  • 2 tablespoons dry bread crumbs
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon dried basil

  • 2 cups thinly sliced escarole

Low-Carb Stuffed Peppers

Ingredients

  • cooking spray (such as Pam(R))
  • 1 1/2 pounds ground sirloin
  • 1/2 pound bulk pork sausage
  • 6 Roma tomatoes, chopped, divided
  • 1 small white onion, finely diced
  • 1 tablespoon butter
  • 2 teaspoons crushed garlic
  • 1 teaspoon dried oregano, or to taste
  • 1/2 teaspoon fennel seed, or to taste
  • seasoned pepper to taste
  • 4 large green bell peppers, tops and seeds removed
  • 6 ounces crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (optional)

Directions

  1. Coat a casserole dish with cooking spray.
  2. Cook ground sirloin and sausage in a skillet over medium-low heat until browned and crumbly, stirring often, 5 to 10 minutes. Drain thoroughly. Mix in 3/4 the tomatoes, onion, butter, garlic, oregano, fennel seed, and seasoned pepper. Simmer over low heat until meat mixture comes together, about 20 minutes.
  3. Preheat the oven to 350 degrees F (175 degrees C).
  4. Fill bell peppers with meat mixture, alternating with layers of feta cheese and Parmesan cheese. Place stuffed bell peppers side-by-side in the prepared casserole dish; add remaining tomatoes around and under the peppers so they cook up and into the peppers. Sprinkle with mozzarella cheese.
  5. Bake in the preheated oven until browned and bubbly, about 30 minutes.

  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 2 cups shredded Cheddar cheese
  • 1 (16 ounce) package frozen tater tots

  2. Cook and stir ground beef in a large skillet over medium heat until no longer pink and completely browned, 7 to 10 minutes; season with salt and black pepper.   • 1 pound lean ground beef
  • 1 onion, chopped
  • 2 teaspoons minced garlic
  • 1 (29 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 1/2 teaspoons salt
  • 1 teaspoon dried oregano
  • 1 (12 ounce) package lasagna noodles
  • 12 ounces cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 16 ounces shredded mozzarella cheese

Directions

  1. In a large skillet over medium heat cook the ground beef, onion, and garlic until brown. Add the tomato sauce, tomato paste, salt, and oregano and stir until well incorporated. Cook until heated through.
  2. In a large bowl mix together the cottage cheese, grated Parmesan cheese, and shredded mozzarella cheese.
  3. Spoon a layer of the meat mixture onto the bottom of the slow cooker. Add a double layer of the uncooked lasagna noodles. Break to fit noodles into slow cooker. Top noodles with a portion of the cheese mixture. Repeat the layering of sauce, noodles, and cheese until all the ingredients are used.
  4. Cover, and cook on LOW setting for 4 to 6 hours.

Midwest Salisbury Steak

Ingredients

Patties:

  • 1 pound ground sirloin
  • 1/2 cup panko bread crumbs
  • 1 egg, beaten
  • 2 tablespoons milk
  • 1/2 (1 ounce) package dry onion soup mix
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon ground black pepper

Gravy:

  • 3 tablespoons butter
  • 2 cups fresh mushrooms, sliced
  • 1 sweet onion, sliced
  • 3 tablespoons all-purpose flour
  • 1/2 (1 ounce) package dry onion soup mix
  • 1 1/2 cups beef stock
  • 1 cup water
  • salt and ground black pepper to taste

Directions

  1. Mix ground sirloin, panko bread crumbs, egg, milk, and 1/2 packet onion soup mix, Worcestershire sauce, and black pepper together in a large bowl; shape into 5 patties.
  2. Heat a skillet over medium heat. Cook patties in hot skillet until browned, 3 to 5 minutes per side.
  3. Melt butter in a separate skillet over medium-high heat. Saute mushrooms and onion in melted butter until tender, 5 to 7 minutes. Stir flour and remaining dry onion soup mix into the mushroom mixture; cook and stir until flour is integrated fully, about 1 minute. Stream beef stock and water over the mushroom mixture while stirring continually; bring to a simmer, reduce heat to medium, and cook, stirring frequently, until the liquid thickens, about 5 minutes. Season with salt and pepper.
  4. Lie the browned steaks into the gravy; simmer until steaks are firm and gray in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

  2. Heat 2 tablespoons olive oil in a large Dutch oven over medium heat; cook and stir the onion, green bell pepper, and garlic in the hot oil until the vegetables soften, about 5 minutes.
  3. Crumble the ground beef into the onion mixture, breaking the meat into smaller pieces as you mix; cook and stir until the beef is completely browned, 7 to 10 minutes. Drain as much fat from the mixture as possible.

  7. Gently fold the cooked potatoes into the simmering ground beef mixture; cook together 5 minutes.

  • 2 pounds beef chuck roast

  • 1/2 teaspoon ground black pepper
  • 4 ounces butter
  • 4 green onions, sliced (white parts only)
  • 4 tablespoons all-purpose flour
  • 1 (10.5 ounce) can condensed beef broth
  • 1 teaspoon prepared mustard
  • 1 (6 ounce) can sliced mushrooms, drained
  • 1/3 cup sour cream
  • 1/3 cup white wine
  • salt to taste
  • ground black pepper to taste

Directions

  1. Remove any fat and gristle from the roast and cut into strips 1/2 inch thick by 2 inches long. Season with 1/2 teaspoon of both salt and pepper.
  2. In a large skillet over medium heat, melt the butter and brown the beef strips quickly, then push the beef strips off to one side. Add the onions and cook slowly for 3 to 5 minutes, then push to the side with the beef strips.
  3. Stir the flour into the juices on the empty side of the pan. Pour in beef broth and bring to a boil, stirring constantly. Lower the heat and stir in mustard. Cover and simmer for 1 hour or until the meat is tender.

  • 1 cup dried bread crumbs

  • 2 tablespoons extra-virgin olive oil
  • 1 extra-large Spanish onion, chopped
  • 2 tablespoons water (optional)
  • 2 pounds lean ground beef
  • 4 cloves garlic, minced
  • 2 tablespoons grated fresh ginger root
  • 1 serrano chile pepper, finely chopped
  • 2 teaspoons chopped fresh cilantro
  • 1 tablespoon ground coriander
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground turmeric
  • 1 (28 ounce) can diced tomatoes
  • 3 potatoes, peeled and diced
  • 1 cup frozen green peas
  • 1 teaspoon garam masala

Directions

  1. Heat olive oil in a large saucepan over medium-high heat. Cook and stir onion in the hot oil until soft and beginning to brown, about 12 minutes. If browned bits of onion are stuck to the bottom of the pan, stir water into onion and stir to loosen the browned bits.
  2. Mix ground beef, garlic, ginger, serrano chile, and cilantro into pan; cook and stir until beef is browned and crumbly, 10 to 15 minutes. Reduce heat to medium-low. Stir coriander, salt, cumin, cayenne pepper, and turmeric into the beef; cook and stir until flavors blend, about 5 minutes. Add tomatoes and potatoes, cover pot, and simmer until potatoes are tender, about 15 minutes.
  3. Mix green peas into dish and cook until sauce has slightly thickened and flavors have blended, 10 to 15 minutes. Sprinkle garam masala over the dish, cover, and let stand for 5 minutes before serving.

Tennessee Meatloaf

Ingredients

Brown Sugar Glaze:

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons cider vinegar

Meatloaf:

  • cooking spray
  • 1 onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 1 teaspoon dried thyme
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons prepared mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon hot pepper sauce (such as Tabasco(R))
  • 1/2 cup milk
  • 2/3 cup quick cooking oats
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1/2 pound ground veal

Directions

  1. Combine ketchup, brown sugar, and cider vinegar in a bowl; mix well.
  2. Preheat oven to 350 degrees F (175 degrees C). Spray two 9×5-inch loaf pans with cooking spray or line with aluminum foil for easier cleanup (see Cook’s Note).
  3. Place onion and green pepper in covered microwave container and cook until softened, 1 to 2 minutes. Set aside to cool.
  4. In large mixing bowl, combine garlic, eggs, thyme, seasoned salt, black pepper, mustard, Worcestershire sauce, hot sauce, milk, and oats. Mix well. Stir in cooked onion and green pepper. Add ground beef, pork, and veal. With gloved hands, work all ingredients together until completely mixed and uniform.
  5. Divide meatloaf mixture in half and pat half of mixture into each prepared loaf pan. Brush loaves with half of the glaze; set remainder of glaze aside.
  6. Bake in preheated oven for 50 minutes. Remove pans from oven; carefully drain fat. Brush loaves with remaining glaze. Return to oven and bake for 10 minutes more. Remove pans from oven and allow meatloaf to stand for 15 minutes before slicing.

Chicago-Inspired Italian Beef Sandwich

Ingredients

  • 1 1/2 pounds boneless beef chuck, cut into 2-inch pieces
  • salt and ground black pepper to taste
  • 1 tablespoon vegetable oil
  • 6 cloves garlic, sliced
  • 2 tablespoons white vinegar
  • 1 tablespoon dried oregano
  • 1 1/2 teaspoons salt, or to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon freshly ground black pepper
  • 1 bay leaf
  • 1/4 teaspoon red pepper flakes, or to taste
  • 3 cups chicken broth, or as needed
  • 4 ciabatta rolls, sliced in half
  • 1 cup chopped giardiniera (pickled Italian vegetables)
  • 2 teaspoons chopped fresh flat-leaf parsley

Directions

  1. Season beef with a pinch of salt and black pepper. Heat vegetable oil in a heavy pot over high heat. Cook and stir beef in hot oil until browned, 5 to 8 minutes.
  2. Stir garlic, vinegar, oregano, 1 1/2 teaspoons salt, thyme, rosemary, 1 teaspoon black pepper, bay leaf, and red pepper flakes into beef. Pour enough chicken broth into beef mixture to cover the meat by 1 inch and bring to a simmer.
  3. Cover pot with a lid, reduce heat to low, and simmer until meat is fork-tender, 1 to 1 1/2 hours.
  4. Transfer meat with a strainer or slotted spoon to a separate pot; pour about 1/4 cup of meat broth into pot. Use a wooden spoon to gently break meat into smaller chunks. Cover pot with a lid or aluminum foil and keep warm.
  5. Skim excess grease from top of broth remaining in the first pot; season with salt and pepper to taste. Cover pot with a lid or aluminum foil and keep broth warm.
  6. Lay halves of a roll out on a work surface and spoon 2 to 3 tablespoons meat broth over each half. Top bottom half of roll with a generous portion of meat and a spoonful of pickled vegetables. Place tops on sandwich. Repeat with remaining buns, broth, meat, and pickled vegetables to make 3 more sandwiches.
  7. Spoon hot meat broth into ramekins and top each ramekin with 1/2 teaspoon parsley. Serve sandwiches with hot broth for dipping.

Directions

  1. Cook beef in large skillet over medium heat, stirring occasionally, until browned, about 5 minutes. Transfer beef to a bowl.
  2. Cook macaroni, bell pepper, and onion in the same skillet over medium heat for 3 minutes. Add cooked beef, tomato sauce, tomatoes, Worcestershire sauce, soy sauce, salt, basil, oregano, ground black pepper, chili powder, garlic powder, and hot pepper sauce. Pour in beef broth.
